The 7" Nakiri knife uses 67-layered stainless Damascus steel, making it the ultimate vegetable knife. The Shogun Series is made of cryogenically-hardened VG-10 steel, wrapped between Damascus steel folded 33 times, retaining its ultrafine edge and resisting corrosion. Each blade is cryogenically treated using the traditional 3-step Honbazuke method, resulting in incredible hardness, flexibility, and corrosion resistance. The hollow-edge design ensures nothing sticks to the blade.

The superior sharpness of the blade is handcrafted to a mirror polish at 8-12° double-sided using the traditional 3-step Honbazuke method, cryogenically treated for incredible hardness, flexibility, and corrosion resistance. Combined with the ergonomic, triple-riveted G10 handle, this knife is carefully constructed with heat, cold, and moisture resistance, accented with a mosaic pin.
